将鱼洗干净,平摊在砧板上从尾到颈,去内脏,去脊骨,取下背部两块肉,冷藏一下。

将鱼肉剁成泥状后,放于搅拌机内进行搅拌,先加7成左右的清水,水的总量为鱼肉的1.7倍。

搅拌好的鱼蓉搁到一个大盆里,先加入适量味精,淀粉,然后左手加盐,右手不断朝一个方向搅拌,用力搅打至鱼糜蛋白质疑胶,呈透明状。

烧一锅水,烧热即可挤丸子下锅。

到水中鱼丸越来越多的时候,可以开火,等水中鱼丸都浮起来了,即可用漏勺捞出,冷却后即可。
