时报讯近日,一份《中文菜名英文译法》讨论稿由北京市旅游局对外公布,此稿初步确定了2753条菜单及酒水的英文译法,并将在全国大型饭店推广。
菜名译法有了规定
在讨论稿中,针对2753种菜名,专家们进行了相对整理。首先是中国菜中以主料开头的菜名归为一类,比如“白灵菇扣鸭掌”就直接采用蘑菇和鸭脚,中间以连词连接;而像“冰梅凉瓜”则把该菜中的主料苦瓜和杨梅汁直接翻译,也用连词连接。
其次,一些中国菜名以烹制方法开头,而这些烹制方法在国外并不存在,比如炖、熘、烩、水煮等。这些菜名则主要采用烹制方法的相应动词,再加上菜肴采用的主料来表示。比如“地瓜烧肉”便用“被烂熟的地瓜和肉丁”来表示,“水煮鱼“则翻译为“热辣油里的鱼片”。
第三类是以口感开头的菜名,这一类的菜则以介绍菜肴形状或口感以及主配料为原则,并进行合理想象。比如“脆皮鸡”翻译为“脆鸡肉”(CrispyChicken)。
最后一类是以人名或地名命名的菜肴,这类直接以菜肴的创始人或发源地的拼音加主料来表示。
比如麻婆豆腐便直接以“麻婆”和“豆腐”的汉语拼音组合成英文菜名Mapo Tofu,“广东点心”则采用广东地名加英文单词点心来表示。
另外本着推广汉语及中国文化的原则,也有菜名保留其拼写方式。
这样的菜名有“佛跳墙”、“锅贴”、“窝头”、“蒸饺”、“油条”、“汤圆”、“粽子”等。
部分网友并不买账
讨论稿公示后,有网友批评翻译名字后面跟着的简介太长了,应该尽量简短。另有网友说,中国饮食文化源远流长,菜名叫法各具特色,翻译得不伦不类,反而丧失了中国的文化特色。
一些网友也表示,其实无须为迎合外国游客而翻译菜名,如果要与国际接轨,不妨给菜品配图,在图片的旁边用英文表明食品的原料。另有提议说,菜名直接写汉语拼音,再配图片和英文说明就一目了然。
