先把排骨剁成块,再放在清水中泡五分钟,泡出里面的血水,再控干水备用。

放进碗里,加一个鸡蛋,适量面粉,一勺蚝油,少量鸡粉,半勺盐搅拌均匀后腌五到十分钟。

锅烧六成热稍稍多一点花生油,把排骨放下去小火煎炸。

一面炸好后翻一面再炸,二面炸至金黄色就好。

再把煎好的排骨铲进盘子里。

烧一碗水,水滚后把排骨放下去隔水蒸十分钟即可。

时间到了不急于打开盖子,等锅里的水蒸气出完后再小心端出来,倒上一勺番茄酱,就可以上桌开吃了,虽然炸过,但又蒸过,不怕上火的啦。
